Building a 30.5 stroker. Using a DDM aluminum intake with 1107 carb (for the choke). Looking at the intake there are tooling marks on the inside that kinda have a swirling to them. Should i polish out these marks or leave them?

I would leave them. You don't want things too smooth in there, you need some roughness to help atomize the air/fuel. Polished intakes can actually obstruct air flow and hinder engine efficiency.
 
In addition to that, is there an extended manifold in our gasser engines?

I have observed that the carb is directly connected to the engine block.
