Wow she's a work of art! Great work! What motor are u going to use?
 
I have put it down to the radio gear in the past AM/FM gave me glitches. Also weather you use Nic batts or LiPos. You could try a Power capacitor. It looks like its trying to find its centre. With the set up you are using I couldn't put a finger on it I'm afraid.

Have you tried a ferrite ring wrapped around the servo lead? Might stop the interference. Is there any reason why you didn't go for the conventional twin jumbo servo set up

The way I learnt about servo's and their torque capabilities were that if a servo is 100kg's at the core then the first hole in the servo arm would half that of the initial 100kg's , so would be 50KG's and every hole after that would half the previous torque before that. 2nd hole would be 25kg and so on.So the closer to the core would be the best torque.
A big no no on the plastic arms, you'll strip the arm at the spline for certain.
Here is a cheapy but good servo. Run a double set-up and they should good to go.
