are there servos meant specifically for throttle and steering?

Yes and no. For steering you want something strong with lots of tq to move these large wheels. For throttle you want something with speed and fast response.

It’s adiqute for the throttle, but the range of motion stays the same for the throttle and steering servo, unless you change it

Ok so I ran into the same problem that ur having and I couldn't figure it out till I re-read the manual I didn't set the end points correctly and on the stock remote it's not obvious on how to do it ...... I honestly couldn't see how it could be done so I didn't think it could be done but after looking back I got the answer so here is a picture of what finally got it right so it would turn equal both ways.......

We told you you may have to go past 100% epa in the radio. The directions are no different then what you've been told.

You should have asked. Epa= end point adjustment.
