snapped of my choke shaft, just wondered how easy it is to remove the snapped part still in the carb

You don't need the choke, remove the screws on the butterfly, draw out the shaft then tap the holes in the carb body and fit grub screws with loctite.
The thing is, the hole where the cross shaft sits will wear - people say 3 shafts and you're looking at replacing the carb because the hole is that worn you'll get running issues - no choke, no problem

Does having no choke not affect cold starting? How do you overcome this?
