What is the difference between a 15kg steering servo and a 20kg???

The kg is a measurement of torque(turning power) So the 20kg has more torque than the 15kg

Well torque is the tendency of a force to rotate an object.
If you want to loosen a screw with a wrench, you put a certain force from the side of the wrench to rotate it.
A 20kg servo will have more steering power. As you know the car is heavy and steering gets harder when heavy load is applied on the car whether from jumps or tire traction from ground.
Hence you need a servo that can sustain those amount of forces and is powerful enough to rotate the steering axis.
If it was only a 5kg servo, it wouldnt have enough power to rotate the steering axis.
