I heard a good operating temp is between 240-260° is this correct? Also where is the best place to take reading with thermal gun? I am running 29cc head kit 14to1 with 112 leaded gas. I just want a good tuned good temp motor.
 
I like 200-250. I try to stay under 250 deg. I take my readings on the clutch side where the cover is open exposing the cylinder.
 
Engine temp isn't as crucial as the color of the plug. Some engines will run hotter than others. If your plug color is fine, you're good, regardless of engine temp.
 
What's the best way to check plug? Run hard then shut down with no idle? Run hard then idle then pull plug? What's good and bad colors?

That's how you do it. The plug should be a brown paper bag color.
 
Yes, plug color is very important. I use a temp gage secondary to my plug color when tuning. I then check temp from time to time and if there's a big change I retune. The leaner the tune the hotter it runs. The richer is cooler because the unburnt fuel mix helps to cool a two stroke motor.
