Did you do anything different from the 1st clip to the 2nd clip the Baja sounded much snappier and more powerful in the 2nd clip?

Yes, you are right. First 1 Stock with x can and second 1 with 30,5 esp and dominator.

I know its louder but, I love the sound of that Dom compared to the Xcan. Do you think it (Dom) would be better then the Xcan and Med x port? I'm choosing between the two. Have you used the small xport with the Dom?

I got the small xport with the dom. The dom gives way more power than the x-can but it also cost more. The x-can is light weight and cheap. If your budget allows it, i would go for the dom.
