What would be a major upgrade for my Hitech HS-5755MG ?

The 5765. The 5755 should be more than enough, though.

Do I have to use lipo on the 5765? With out lipo but a 5000 mah battery; would I get better steering power over my current HS-5755MG?

Won't be a big difference. You'll notice a bigger difference if you up the voltage.

I would not use the servo unless upgrading to a higher volt receiver pack.
