quick question on engine temp

so I broke my obr prostock 30.5 in according to the instructions on YouTube. All went well. Now I'm tuning it for regular high speed running and I can't seem to get it right. If I turn hsn to where it doesn't sputter on wot it gets to 310 degrees... I'm trying to keep it under 290 but it just doesn't want to do that.. Oh and its a 668 carb. I have a 990 if it would make a diff I could put it on. Any ideas?
 
swapped to the 990. Took only a couple minutes of adjusting and doing high speed runs to get it dialed in. No its running like at bat outta hell!!! And staying at 240-265. It is only 40 out so its a little cool
 
In doing testing on this several years ago.
I personally like to use 260 as a Max high number on temp. ( If it hits 265 or ANY higher - Shut it down )
Hard running around 210 - 230 prefered.
Normal running in the 190 - 210 range.

I try and keep my range at 200 - 240
