This is a general question not related to any specific engine

They are quite a few makes of 1/5 rc carburetors in the market

When deciding which one to buy what factors do you take into account such as engine size, engine type etc. also Walbro have different model numbers. How do they differ

There are major design differences in the Walbro WT lineup.

Currently the popular WT model are 257, 644, 488(extinct) 668, 771, 813, 929, 990, 1052 and the 1048 and probably a few others.

Some have chokes and primer bulbs, some have just primer bulbs and some have neither.
Some have discharge holes other have annular fuel dischrge orifices.
The 813 has a accelerator pump.
Many have different length throttle shafts and some have reduced diameter throttle shafts.
There are many differences other than just this but just too much info to type here.
 
Imo its what your looking for. Reliability, torque, etc. 668 =reliability, 813=low end performance sacrificing choke but when tuned right 3pulls anyways. I've had the 990 on 30.5 stroker and has been good to me. Wheelie popping low end nice mid range acceleration.
