Whats the deal with brushless motors and kv?

I just ordered 2 sss 5694 800kv motors
I had the option of 800 1000 1650 kv
I went 800. I've seen some motors up 2400kv
I'm so lost i asked a crawler buddy to explain it to me. Just made it worse.
Plan on two flier 300a esc

Lower kv= more tourqe less rpm, but can pull higher gears
Higher kv= higher rpm, but with the sacrifice of tourqe so it cannot pull as high gears

kv means rpms per nominal voltage per minute
What u using it in?

KV is how many RPM a motor will do per volt. Less KV means more torque but less rpm. More Kv mean less torque but more rpm

Its a 55" catamaran. It was originally a 30cc gas boat with a max speed of 35mph. Wanna hit at least 55mph. Hell my little genesis will blow over at 65
