Installing new exhaust do I have to replace exhaust gasket?

Depends .....was the last one leaking? Did it come off without tears?

Stock muffler came off clean.Is there two gaskets? One stuck to head and one to muffler?
should be one gasket mate,
if you're saying your stock can and the head have some gasket on there surface then the gasket probably separated ,
if in doubt fit a fresh one, there cheap

I use chain saw gaskets.
They're cheap and last longr than the RC ones.
Just tidy em up to match the port if needed.
